Sweet Potato & Apple Bake

Ingredients
- 1/2 cup butter
- 1 1/3 cups packed light brown sugar
- 1/2 cup apple juice
- 1/2 cup orange juice
- 2 tbs balsamic vinegar
- 1 tsp cinnamon
- 1/8 tsp allspice
- 1/8 tsp kosher salt
- 1/8 tsp nutmeg
- 2 1/2 pounds medium sweet potatoes, peeled and thinly sliced
- 3 Granny Smith apples, cored and cut horizontally into 1/4-inch-thick slices

Instructions
- Preheat oven to 350°. In medium saucepan, melt butter over medium heat. Add brown sugar, apple juice, orange juice, vinegar, cinnamon, allspice, salt and nutmeg. Increase heat and cook until mixture simmers; remove saucepan from heat.
- Spray 13 x 9-inch baking dish with cooking spray. Layer sweet potatoes, apples and juice mixture in baking dish. Cover with foil and bake 1 hour. Remove foil and bake 15 minutes longer or until potatoes are tender.
