Green Onion Dip with Fresh Veggies

Instructions
  1. In food processor with knife blade attached, add green onions, garlic, spinach, oils, and tarragon. Process 1 minute or until mixture is smooth, scraping bowl occasionally with rubber spatula.
  2. Add mayonnaise, mustard, lemon juice, salt, and pepper, and process 30 seconds or until well combined.
  3. Sprinkle dip with chives and serve with fresh vegetables.
  4. Makes about 2 1/2 cups

  1. Preheat oven to 375°. In medium bowl, sift together cornmeal, flour, sugar, baking powder, chili powder and salt. In separate medium bowl, whisk together eggs, milk, melted butter and corn syrup.
  2. With rubber spatula, fold egg mixture into cornmeal mixture; mix until just combined. Fold in jalapeño peppers.
  3. Spray 8x8-inch baking dish with nonstick baking spray. Pour mixture into prepared dish. Bake 22 to 25 minutes or until top is lightly browned and toothpick inserted into center comes out clean. Let cool and cut into squares. Refrigerate leftovers in an airtight container.

  1. In a saucepan mix the sauce ingredients. Heat and stir until smooth. Set aside. Mix meatball ingredients in a large bowl. Form into small balls (about 1 1/2 inches in diameter). Place meatballs into a baking pan and cover with sauce. Bake at 350° for one hour.

  1. Combine 1/4 cup barbecue sauce, seasoning and jalapeños in a small bowl. Knead spice mixture into ground beef and roll into 6 patties.
  2. Brush grill grate with oil or coat with nonstick cooking spray. Light grill using Kingsford® briquets.
  3. Grill burgers for 12-16 minutes on a covered grill until burgers are cooked through, turning once. In last 6-8 minutes of grilling time, place onions on grill. Top burgers with cheese during last minute of cooking time. Lightly spread butter on bun. Grill

Grilled Cilantro-Lime Fish Tacos

  1. In small bowl, mix lime juice, lime zest, garlic, jalapeño, sesame oil, cilantro, salt and pepper. Place fish in large zip-top plastic bag and pour lime juice mixture into bag. Refrigerate 1 hour.
  2. Prepare outdoor grill for direct grilling over medium-high heat. Tear 2 sheets of foil (each about 18 inches long). Place 1 sheet on work surface and spray center with nonstick cooking spray. Remove fish from marinade (discard all but 1 tablespoon), and t
  3. Place packet on hot grill rack. Cover and cook 10 minutes. Carefully open 1 end to let steam escape, then open sides of foil packet.
  4. On microwave-safe plate, place tortillas between 2 damp paper towels. Heat in microwave oven on high 10 seconds or until tortillas are warmed.
